Weekend Recap: Home Cookin'

Happy Monday friends! I'm not very happy that its Monday and especially not very happy that the cold weather is back in these parts, but I shouldn't complain since I did absolutely nothing all weekend except eat, sleep, and watch TV.

In my defense, I did get a lot of home cooking done with the boyfriend this weekend. While we normally go out for dinner during the weekends, we only went out for lunch once in the past three days! Instead, we spent a lot of time in the kitchen whipping up some new recipes and taking advantage of using the grill in the warm(er) weather. Here's what we had:

Friday Dinner:

Cilantro and Jalapeno Grilled Shrimp with Avocado and Grapefruit Salad and Rice and Beans

Saturday Brunch:

Easy Chocolate Chip Banana Pancakes with Sunny Side Up Eggs and Brown Sugar Sausage

Saturday Drinks

(enjoyed on the balcony overlooking the Pax River)

Fresh squeezed Margaritas (emphasis on "Fresh squeezed," it took us an hour just to squeeze 10 limes!)

Sunday Dinner:

Grilled steaks, sauteed asparagus, red skin mashed potatoes.

We normally NEVER cook this much so it was nice change of pace. Here's some of our (very easy) recipes if you're curious:

Avocado and Grapefruit Salad

INGREDIENTS
1 tablespoon Dijon mustard
1/4 cup freshly squeezed lemon juice
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1/2 cup good olive oil
4 ripe Hass avocados
2 large red grapefruits

INSTRUCTIONS:

Mix together the mustard, lemon juice, salt, and pepper in a small bowl. Slowly whisk in the olive oil until the vinaigrette is emulsified.

Peel and slice the avocados and place them in the vinagarette to prevent them from browning. Peel and slice the grapefruit and place them onto a large platter. Then arrange the avocado slices onto the same platter. Spoon the vinaigrette on top.

Easy Chocolate Chip Banana Pancakes

INGREDIENTS
1 package Hungry Jack pancake mix (yields 12 pancakes)
2 Bananas (one firm, one very soft)
Semi-sweet Chocolate Chips

INSTRUCTIONS:

Mix together the Hungry Jack pancake mix as directed on the package.

Mash the soft banana into the pancake mix. Make sure there aren't too many large chunks.

Mix together the semi-sweet chocolate chips.

Cook on the griddle as directed until golden brown.

Fresh Squeeze Margaritas

INGREDIENTS:
1800 Reposado Tequila
Triple Sec (or any orange liquor)
10 limes
Splash of Orange Juice
1/2 Cup Simple Syrup
Ice

INSTRUCTIONS:

Roll limes on a hard surface to release juices. They should no longer be firm on touch. Using a juicer (or improvise with kitchen tongs like we did) juice limes into a pitcher. Add a splash of Orange Juice and the simple syrup to the lime juice. Put the pitcher in the freezer for about an hour

Remove from freezer. Add Tequila/Triple Sec to taste (we like ours strong ;D). Add ice and serve in rocks glasses with salt around the rim.

Hmm, after writing this post - I'm definitely ready for dinner! I'm thinking of whipping up something new again tonight but definitely need to find some healthy recipes to try. Its also been FOREVER since I've gone grocery shopping for myself, so I guess I should get on that! After all - we're supposed to be expecting more snow tomorrow so I guess I really do need to stock up....
